Tenuta Il Radichino, an organic farm founded by the Pira family, raises sheep, goats and red cows in the wild, supplementing fresh pasture with fodder grown directly on the farm. The farm’s dairy produces mostly raw-milk cheeses that look to the traditions of Alto Lazio, such as pecorino, ricotta, and curds, and to creative contemporary styles, from which the farm’s flagship products, such as sheep and goat blue cheeses and cheeses aged with pomace, candied fruit, and dried fruit, are made. In addition to dairy production, the company makes Cinta Senese pork, beef and sheep salumi from animals raised in the wild.
