Each year, during the peak summer months of July and August, we cultivate and harvest premium-quality tomatoes in our 3-acre greenhouse, located right next to our production site. Once picked at peak ripeness, the tomatoes are carefully laid out on our specially designed sunbeds, where a touch of salt and the Mediterranean sun begin the natural drying process.
With temperatures often soaring above 40°C in August, our experienced team monitors the drying closely to ensure each tomato develops its rich, intense flavor—never over-dried or scorched.
