Zariphico: Sustainable Olive Farming in Crete
Zariphico operates 15 acres of olive groves across Crete’s Prefecture of Lasithi, from the village of Sikia (350m elevation) to Palaikastro, where centuries-old olive trees yield premium fruit through sustainable farming practices.

Our family implements strict sustainable cultivation practices that honor both nature and tradition:
• Wildlife preservation: Following grandfather Nikolis’ wisdom, we leave olive fruits for birds to sustain local fauna and maintain ecosystem balance
• Natural resource management: We trust nature’s processes, using its resources responsibly for continued evolution
• Traditional manual harvesting: Hand-picking from ancient Koroneiki variety trees preserves both fruit quality and tree health
• Cold pressing technology: Immediate processing below 27°C maintains nutritional integrity.
