Our organic farm covers over some stunning hilly country in the north of Lazio Region near Bolsena Lake in the Viterbo province. The farm has been in the family since the 17th century and we have been cultivating the land as an organic concern for over 30 years. Of its 250 hectares, 40 are given over to olive groves, 17 to hazelnut trees and the rest being a mix of cereal crops and orchards with plum, apricot and sour cherries. The olive groves are of Caninese and Frantoio varieties. The olive mill we bought in 2003 enables us to cold press our own olives in a continuous cycle straight after harvesting. by keeping the Frantoio and Caninese varieties cultivars apart, we can bottle our prized oils separately. The are the authentic expression of our terroir. We keep our extra virgin olive oils in nitrogen-flushed tanks, and we bottle immediately before shipping to conserve their full flavor, aroma and freshness. our oils: IL MOLINO DOP Tuscia, IL MOLINO Frantoio, Il Molino evo.o.
